Following on from my last post, I have been dying to get in the kitchen and bake a little something to nibble on with a steaming hot cup of coffee. It's a windy, rainy day outside, it's my day off and I find myself at a loose end until the school run beckons so I have delved into the pages of my beloved Fika recipe book and found a nice easy recipe to try. Hasselnötsflarn or Hazelnut Crisps! These will be a real treat for when the children arrive home hungry from a busy day at school.
They use everyday ingredients: 1 egg, 57g butter, 99g raw cane sugar and 106g hazelnuts. Shop around when buying hazelnuts. They can be ridiculously expensive in the supermarkets! I found mine in Aldi at a sensible price. Melt the butter, whisk the egg, grind the nuts then combine everything with a few drops of vanilla extract. Ten minutes in the oven at 175°C gas mark 4 et voila!
Try them for yourself and let me know what you think. Apparently they are also good served with ice-cream. They taste absolutely delicious - I'm not sure they'll be many left by the time the family gets home!
